In House Fresh Sausage: The Denman
What is Sausage? A blend of meat or poultry and fat with spices that is made into a patty or stuffed in a casing, either natural (intestine) or synthetic (collagen).
Did you know? The first known evidence of humans making sausage is on Sumarian wall carvings from 3100 B.C.E.
Despite the many delays we do, in fact, get closer and closer to opening with everyday that passes so I wanted to offer you all another sneak peek into what we’ll be offering. Today we’re talking sausage. Many countries have their own iconic sausage recipes like the German bratwurst, the French andouille, the Mexican chorizo or the Thai sai ua and we at the West End Butcher & Deli will have a few iconic sausage recipes of our own. Sausage is a staple of butcher shops world wide for a few solid reasons. It’s a total crowd pleaser, tasty, easy to cook and great value for money. You really can’t go wrong with sausage.
Ben’s experience in restaurant kitchens and behind the butcher block has given him a real imaginative touch when it comes to creating our sausage menu. It’s a thoroughly mouthwatering fresh menu inspired by the niche vibes of Vancouver’s city streets. The one I’m sharing with you today is inspired by Denman St. and its many wonderful Persian restaurants. The Denman is a lamb and beef sausage in a natural lamb casing. The spice blend that includes cumin and ras el hanout gives it a taste that is equal parts earthy and floral. The harissa paste adds a touch of smokiness and spice and finally a hint of sour lime powder to brighten it up. Some of the other Vancouver streets that have inspired our sausage spice blends are Kingsway, Oak St, and, of course, Davie St. Dare I say we’ll have the best sausage in the West End! We can’t wait to serve you and we hope you’ll come eat with us.
